Equipment

  • 9-inch round cake pan flan mold
  • Roasting Pan for water bath

Ingredients
  

Carame

  • 1 cup sugar
  • ¼ cup water

Custard

  • 4 eggs
  • 1 can sweetened condensed milk 14 oz
  • 1 can evaporated milk 12 oz
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Melt the sugar and water together until amber, then pour into the pan.
  • Blend the custard ingredients and strain into the caramel-lined pan.
  • Place the pan in a roasting pan and add hot water halfway up the sides.
  • Bake for 60–75 minutes until set but still slightly jiggly.
  • Cool, then chill for at least 8 hours before inverting to serve.

Notes

Avoid overbaking. Strain the custard for silky smoothness. A water bath is essential to prevent cracking.
