Equipment

Ingredients
  

Fruit filling:

  • 4 cups mixed fruit
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp flour or cornstarch (if fruit is very juicy)

Topping:

  • 1 cup oats
  • ½ cup flour
  • cup coconut or brown sugar
  • ½ tsp cinnamon
  • 1 Pinch of salt
  • ½ cup cold coconut oil or vegan butter

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Toss fruit with maple syrup, lemon juice, vanilla, and flour/cornstarch if needed. Place in a baking dish.
  • Combine oats, flour, sugar, cinnamon, and salt. Cut in cold fat until crumbly.
  • Sprinkle topping over fruit. Bake 30–35 minutes until topping is golden and fruit is bubbling.
  • Cool slightly before serving with vegan yogurt or custard.

Notes

Use frozen fruit directly; no need to thaw. Keep fat cold for a crisp topping. Add ginger or cardamom for extra flavor.
