Ingredients
Fruit filling:

Topping:

oats

flour

coconut or brown sugar

cold coconut oil or vegan butter
Instructions
Preheat oven to 375°F (190°C).
Toss fruit with maple syrup, lemon juice, vanilla, and flour/cornstarch if needed. Place in a baking dish.
Combine oats, flour, sugar, cinnamon, and salt. Cut in cold fat until crumbly.
Sprinkle topping over fruit. Bake 30–35 minutes until topping is golden and fruit is bubbling.
Cool slightly before serving with vegan yogurt or custard.
Notes
Use frozen fruit directly; no need to thaw. Keep fat cold for a crisp topping. Add ginger or cardamom for extra flavor.
